It’s A Miracle! Delicious Grain Free Spaghetti

I’m so glad I taught Alyssa how to cook and to be adventurous enough to try new foods. It is a wonderful gift that I gave her and she doesn’t even realize how priceless it is yet.

I reached over and answered my phone at work.

“Hello?”

“Mom, I’m going to make spaghetti for dinner with noodles you can eat.”

My heart skipped a beat. I hadn’t tried any of the alternative noodles since being diagnosed with a grain allergy. Part of me was scared to try them because if they all tasted really bad, it would somehow make grain free living feel worse. Actually, to be honest, I really don’t eat as much as I used to eat and I don’t get as hungry. I do, however, often think of Krispy Kreme Doughnuts…

When I arrived home quite late, I found “Chef Striped Socks Alyssa” and “Detective Eat Anything You Drop Bella” in the kitchen cooking.

Mmmmm…the homemade spaghetti sauce was already finished and smelled so yummy. Alyssa loaded a spoon and I tasted it. Yep! Alyssa’s spaghetti sauce is as delicious as mine! The sauce was rich with tomatoes, lots of garlic and seasoned perfectly.

On the counter top were two bags of spaghetti noodles. Not just any noodles, but miracle noodles! Rice, potato, soy spaghetti noodles taste like regular noodles and they do not have any grain in them!

The ingredients for the spaghetti noodles are: organic rice flour, organic rice starch, organic potato starch and organic soy flour. Uh huh! No grain!

After filling a big pot full of water and getting it to boil, Alyssa added the rice, potato, soy spaghetti noodles to the water. Per the spaghetti directions, she had to stir the noodles while they were boiling. That’s a small price to pay for the opportunity to eat noodles!

When the spaghetti noodles were finished cooking, I poured them into the colander. Now it was the moment of truth. It was time to taste the rice, potato, soy spaghetti noodles to see how they REALLY taste.

Oh my goodness! They are delicious!!!

Alyssa had also gone shopping to get “bread,” but I was skeptical. She smeared garlic butter and three cheeses to the top and put it in the oven to bake. This “bread” is tapioca bread and is also grain free.

Be still my heart!

Well, eventually everything was ready to eat and I was actually excited! Alyssa did a magnificent job preparing our meal and everything tasted delicious. Not just delicious in a grain free way, but delicious any way you look at it!

You know what? This spaghetti didn’t make me feel “heavy” or “tired” like the regular spaghetti always did, so I had the energy to immediately make dessert!

What did I bake?

I made Gooey Grain Free Chocolate Bars. Of course, I couldn’t wait for them to cool so that I could cut them neatly. I just scooped the gooey bars into a bowl and ate every bite. It didn’t end there! I licked the spoon and bowl totally clean too because this dessert is lickably-delicious.

      Thank you! Rice is actually a “cereal grain,” but my doctor said that most people who are allergic to “grains” can usually tolerate white rice so to give it a try in moderation. I’m not really sure what the big difference is between white rice and wild/brown rice, but she told me not eat anything other than the white. Sooooooo I gave it a try and didn’t break out. 🙂 I figure if I would just eat rice a couple times a month and see if it affects me.
