The Wanna Be Healthy Cookie Bars are a mixture of many different ingredients which make the dessert moist, crunchy, ooey, gooey and absolutely delicious. They are quick and easy to make without having to worry about totally perfect measurements. Since they are a bar cookie, you can determine how little or big you cut the squares. Just remember that the Wanna Be Healthy Cookie Bars are very rich!

Wanna Be Healthy Cookie Bars
So I guess you thought that you wouldn’t ever see my homemade graham crackers again, didn’t you? Well, here they are again because the graham crackers are the beginning of this recipe!
The goal is to make fine graham cracker crumbs. Any size food processor does a great job, so pull out the little chopper and go for it.
Pour the graham cracker crumbs in the pan while the butter is melting. After the butter has turned to liquid, pour it over the graham cracker crumbs and mix well.
Now spread the crumb mixture so that it covers the bottom of the pan. Press it flat with the back of a spoon to make a firm crust base.
It looks yummy already, doesn’t it?
(A resounding agreement and applause can be heard echoing loudly.)
What’s this? Oh my, it’s HEALTHY and delicious shredded carrots! Add the carrots to a bowl.
To the bowl with the carrots, add shredded coconut and…
roughly chopped pecans. I say that like “pee-cans,” but I know most of you probably say, “pe-cawns” which, of course, is totally wrong. 😉
Now, rough chop the white chocolate chips. It is really fun to rough chop the chips because if you hit the chip just right, it will fly across the kitchen! Cooking can be SUCH an adventure.
Add the rough chopped white chocolate chips to the bowl of dry ingredients. Mix everything together really well and set aside for a minute.
Get the chocolate chips and make a layer of them on top of the graham cracker crust in the pan. Bea-u-ti-ful!
Carefully pour the mixed dry ingredients on top of the chocolate chips making a nice layer. Look at all those healthy orange carrots!
Carefully drizzle the condensed milk on top of the dry ingredient layer. Spread the condensed milk around lightly with a spoon being sure to cover all the dry ingredients.
Drizzle the evaporated milk on top of all the ingredients.
Spread the evaporated milk around lightly with a spoon.
Press all the ingredients down with the back of a spoon – CAREFULLY. If you can’t do it without ripping off the top layer, skip the pressing step.
I believe in you, so TRY to do the smooshing step! After pressing it down, it is time to cook the Wanna Be Healthy Cookie Bars.

The edges are brown and very gooey yet slightly crunchy.
Also notice the ooey gooey inside layer.
Yes! Look at the healthy orange carrots! The carrots add a FANTASTIC texture to the cookie bars.
Shreds of coconut and carrots add the whole healthy element to the cookie bars. I guess you figured out that although this decadent dessert has fresh and nutritious carrots in it, I really can’t say that it is a healthy dessert. That is why I named it the Wanna Be Healthy Cookie Bars because the cookie bars really want to be healthy.

Wanna Be Healthy Cookie Bars
Ingredients:
2/3 stick butter, melted
2 cups graham cracker crumbs
1 1/2 cups semi sweet chocolate chips
1/4 cup white chocolate chips, rough chopped
1 cup shredded carrots
1 cup coconut, shredded
1 cup walnut pieces pecans, rough chopped
14 ounces sweetened condensed milk
1/2 cup evaporated milk
Directions:
Preheat oven to 350 degree Fahrenheit .
Melt butter and mix with graham cracker crumbs in a 9″x13″ pan being sure to cover the bottom. Press the crumbs firmly in the pan. Put in the freezer for 5 minutes.
Meanwhile, mix the white chocolate chips, coconut, pecans and carrots together in a bowl. Set aside.
Pour a layer of chocolate chips on top of the graham cracker crust. Pour the mixture of dry ingredients on top of the chocolate chips. Drizzle the condensed milk on top of the dry ingredient mixture. Spread the condensed milk around lightly with a spoon covering all the dry ingredients. Drizzle the evaporated milk on top of all the ingredients. Spread the evaporated milk around lightly with a spoon. Press all the ingredients down with the back of a spoon – CAREFULLY. If you can’t do it without ripping off the top layer, skip the pressing step.
Bake in a preheated 350 degree Fahrenheit oven for 20 – 30 minutes (humidity and your oven temperature will make the difference in time). The cookie bars will be slightly brown when done.
Cool completely in the pan on cooling racks. Cut into squares. Serve after hiding a couple cookie bars for yourself in the back of the cupboard. (wink)
