If you haven’t noticed yet, I get attached easily and have a hard time letting go. This is seriously a problem especially when something is bad for me. I try to make things work past the point of common sense. I just don’t like “endings” to anything.
So with that being said, I watched Mr. Sweet Potato Head grow lots and lots of beautiful roots. Each day he seemed to drink more and more water because there were new leaves appearing EVERY single day! I have been so excited!!! When the sweet potato plant had gotten as big and full as I wanted it to get, I knew that I needed to cut all the sweet potato shoots off in order to cook them.
But…
I didn’t want to cut them off and eat my plant! I have grown fond of Mr. Sweet Potato Head!!! In order to show you the recipe, I HAD to cut off the green foliage!
So…I gave Mr. Sweet Potato Head a buzz cut.
Mr. Sweet Potato Head didn’t really mind getting a buzz. Actually, he is still just a sweet potato without shoots covered with leaves. I got really attached to this sweet potato because he was right next to me while I worked on the computer each day. I would look at the new growth that seemed to happen right before my eyes and marveled at not only the science of it all, but that I wasn’t killing an indoor plant! LOL
Lessons I Learned From A Sweet Potato
This little experiment with a sweet potato taught me quite a few things:
- Young sweet potato shoots are more tender and flavorful when cooked.
- Older sweet potato shoots are “woody” and less flavorful.
- Nature is truly a miracle.
- I do not always have a black thumb. 😉
- Sweet potato shoots are easy to grow!
- The warmth of the computer keeps hydroponic plants at a perfect temperature.
- Sweet potatoes can grow roots in water or soil.
- Not only do I love eating sweet potatoes, I also think that sweet potato shoots and leaves are delicious too.
- Bella smelled an uncooked sweet potato leaf that I dropped and immediately ate it. I guess she thought it smelled good!
- We should be like a sweet potato.
I bet you are wondering about #10.
There are several reasons that I think we should be more like a sweet potato.
- It doesn’t take much for the sweet potato to thrive. Obviously, a sweet potato isn’t very demanding. It only took a constant supply of clean water, warmth, oxygen and some sunlight to make it thrive. If we simplify our lives, I believe we will discover our true potential.
- Mr. Sweet Potato Head is not the most beautiful vegetables, however, that didn’t stop him from growing beautiful shoots and leaves. The outside appearance of a person is only the beginning. What really matters the most is their mind, heart and soul. I always tell Alyssa that if she will find a companion that she can talk to about anything, it will be a lovely match. We can’t look like twenty year olds forever, but if we can have interesting and intelligent conversations, the relationship will continue to flourish.
- Even if we start with nothing, if we are determined, we can be successful. The sweet potato didn’t have roots, sprouts or leaves in the beginning, but with proper care they all appeared. The leaves were a beautiful green and almost silky to the touch. All of us are born with nothing. No matter what our circumstances, if we don’t give up, we can have success each day. For instance, someone who is agoraphobic may walk all the way to the mailbox. THAT would be success for them. Even small successes count.
- I stink at being alone. Yes, I admit it. I came home each day and talked to a sweet potato. Obviously I am a bit lonely. It is quite obvious to me why I prefer being married over being single. I miss having someone to come home to in order to share my day, share their day and share our future. I guess I have to take one step at a time. First, get rid of this PTSD the rest of the way so that I can restore confidence in myself. Then…well, I guess time will tell what happens next.

Strange but I was thinking the exact same thing as Skip. There may very well be more shoots left in Mr. Sweet Potato Head to sprout and more lessons for you to learn. And you were thinking Mr. Sweet Potato Head was done sprouting. Which goes to prove you never really know a sweet potato, just like you never really know another human being. Just when you think you know everything there is to know about a sweet potato or a human being what do they do? They do something that totally surprises you! Which just goes to prove that sweet potatoes are as complex as human beings and in life there are always new lessons to be learned! 🙂

Well, first we have to make sure that I don’t inadvertently kill Mr. Sweet Potato Head and THEN we will see if he grows again. With all those roots still in crystal clear water, I bet he shoots some more shoots! 😛
